Chicken Breast with Creamy Tarragon Sauce

Since living in south Florida I have been very spoiled with the incredible fresh fish that we so often take for granted that I eat 70-80% of some sort of seafood. Red meat and chicken have certainly taken a back seat to my cooking but it’s probably because hanging out with a TV cooking Chef such as Isa Souza, I have upgraded my palate a little bit. She is always making exotic dishes but always things that are healthy, simplistic, mouth watering and the ingredients are always available to find. She has also challenged me to be more creative in the kitchen and not be afraid to venture out into the world of culinary bliss. She is so right…so many wonderful flavors to explore and having a Food Lover friend and TV Chef to give you ideas and recipes, how can I go wrong? And really…how can you go wrong knowing they come from the experience and expertise of Isa? Well…you can’t, it’s going to be good for sure.

I have not had any chicken for some time and I had some tarragon in my refrigerator so I decided to incorporate the flavors of tarragon, cream and shallots and I have to say…it was delicious. I coated mine with cream but you can reduce the calories significantly by just drizzling a little cream sauce over the chicken. I just so happen to like the sauce so much I had to make sure it was smothered in sauce. I would say…two thumbs up for all Food Lovers to try my Chicken Breast with Creamy Tarragon Sauce.
