Roasted peppers with olive oil and balsamic glaze. Maybe this seems rather simplistic but I really enjoy roasted peppers, especially red bell peppers drizzled with a good extra-virgin olive oil and a balsamic glaze with fresh basil. Some times I add a little minced garlic and white anchovies and serve it over slices of tuscan bread to absorb the flavors. There are multiple ways to roast a pepper, oven, on your barbie, or as I often do right in a panini press. The key is coating a little olive out on it and when it’s done place them in a paper bag, makes the pepper sweat and super easy to remove the skin.

Ingredients
- As many as you wish red bell peppers rinsed and dried
- Extra virgin olive oil
- Balsamic glaze
- Fresh basil chopped
Instructions
- 1. Set oven to low-broil with rack on upper 2/3 of oven
- 2. Place a cookie sheet below the upper rack to catch liquids
- 3. Coat each pepper lightly with some olive oil
- 4. Place peppers on upper rack and rotate as they begin to bubble until all sides are slightly burnt
- 5. Transfer to a paper page and fold top allowing peppers to sweat and come to room temperature, about 30-minutes
- 6. Remove from bag removing skin and seeds
- 7. Serve drizzled with a good extra-virgin olive oil, balsamic glaze and fresh basil
