This is one of those dishes when you just have an idea what you want, grab the ingredients and simply make it. This Avocado Mexican Bean Salad is healthy, easy and best of all, very quick to make. The skirt steak is also one of my favorite cuts of beef. I eat it at least once per month. I hope you enjoy my Avocado Mexican Bean Salad with Seared Skirt Steak Cheers!!

Ingredients
- Ingredients for Avocado Mexican Bean Salad
- 2 cans chick peas drained and rinsed
- 1 avocado diced
- 1 tomato chopped seeds removed
- 1 green onion chopped
- 3 tablespoons rough chopped cilantro
- 1/2 lime juice
- 1/3 cup olive oil
- pinch of salt and pepper
- Ingredients for Seared Skirt Steak: Skirt Steak
- Sea salt
- Fresh ground pepper
- Chipotle seasoning (optional)
- Vegetable oil
- Fresh lime juice
Instructions
- 1. Avocado Mexican Bean Salad: In a glass bowl combine all ingredients with a pinch of salt and pepper and fold gently
- 2. Drizzle a little oil on steak using your hands to massage ingredients into the steak on both sides
- 3. Place skirt steak on a cookie sheet and season with sea salt, pepper and a little chipotle seasoning
- 4. Cover with plastic wrap and allow to sit at room temperature for 20-minutes and prepare the grill
- 5. Heat grill on high for at least 12-15 minutes to get really hot. Place steak on grill for 3-4 minutes per side for rare squeezing a little fresh lime on each side
- 6. Remove placing on a tray and allow to rest for 10-minutes covered
- 7. NOTE: Slice against the grain and serve.
