Grilled Vegetables Sautéed in Vegetable Broth, Thyme and Garlic was just made off the cuff. I had numerous vegetables that I had to use up before I leave for a few days. This is one of the easiest dishes I’ve ever made, quick, tasty and so simple.

Ingredients
- Portobello Mushrooms
- Asparagus
- Carrots
- White Mushrooms sliced
- Sweet Onion chopped
- Red & Yellow Peppers
- 3 garlic cloved chopped
- 3 sprigs fresh thyme
- 15 oz vegetable broth
- Salt and pepper
- Extra-virgin olive oil
Instructions
- 1. Drizzle a little olive oil over vegetables, pinch of salt and grill
- 2. In a large saucepan sauté chopped onion, garlic in olive oil with a pinch of salt, add one 15 oz can of vegetable broth, a teaspoon of thyme, bring to boil and reduce to a simmer and after vegetables are grilled, sauté in broth for 2-minutes
- 3. Serve with a drizzle of good extra-virgin olive oil and enjoy
