Every year I give up a few things for Lent. I am not Catholic but I always give up a few things from Ash Wednesday to Easter. The foods I give up consist of pizza, pasta, potatoes, alcohol, bread, sweets and red meat. The past 3-years I started doing a Daniel fast the last 21-days, which is only eating fruits, whole grains and vegetables. It’s not easy but I prepare myself well in advance mentally. My friend from my church in Florida, Joanne shared with me a lentil patty recipe and it looked and sounded fantastic. I made a few changes and created The Social Chef Lentil Burgers. I have to admit, being a carnivore lentil burgers don’t really sound all that appealing. But I can tell you I really enjoyed this and I bet on a toasted bun with lettuce, tomato, sliced onion and a pickle you would enjoy this. Give it a try, certainly a healthy alternative to red meat.

Ingredients

  • 1 1/2 lentils cooked and drained
  • 1/4 cup red onion minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1/4 cup oatmeal pulsed in Cuisinart
  • 2 oz frozen spinach drained
  • 4 garlic cloves minced
  • 1 chipotle pepper in adobo sauce minced
  • 1 teaspoon adobo sauce
  • 1 cob of corn, kernels removed (or 1/4 cup frozen corn)
  • 1/4 cup diced portobello
  • 1/4 cup brown rice flour (more or less, use as needed)
  • Salt and pepper

Instructions

  • 1. Using a ricer, potato masher to fork, smash lentils 2/3 of lentils
  • 2. Using a large bowl combine all ingredients (except flour ), 1/2 teaspoon salt and fold well to combine
  • 3. As needed add flour and stir until you can form a patty and doesn't separate
  • 4. Using a nonstick pan over medium heat add 2 tablespoons olive oil and fry until it gets slightly brown and crisp
  • 5. Serve with a squeeze of fresh lime juice (optional)
