Not sure what I can say about this dish of avocado mexican bean salad, the ingredients speak for themselves. They are a perfect marriage of flavors that make a wonderful healthy yet hearty side dish. This is also a fantastic dish just perfect for summer gatherings. I’m sure you will enjoy it!!

Ingredients
- 2 cans chick peas drained and rinsed
- 1 avocado diced
- 1 tomato chopped seeds removed
- 1 green onion chopped
- 3 tablespoons rough chopped cilantro
- 1/2 lime juice
- 1/3 cup olive oil
- pinch of salt and pepper
Instructions
- 1. In a glass bowl combine all ingredients with a pinch of salt and pepper and fold gently.
