Not sure what I can say about this dish of  avocado mexican bean salad, the ingredients speak for themselves. They are a perfect marriage of flavors that make a wonderful healthy yet hearty side dish. This is also a fantastic dish just perfect for summer gatherings. I’m sure you will enjoy it!!

Ingredients

  • 2 cans chick peas drained and rinsed
  • 1 avocado diced
  • 1 tomato chopped seeds removed
  • 1 green onion chopped
  • 3 tablespoons rough chopped cilantro
  • 1/2 lime juice
  • 1/3 cup olive oil
  • pinch of salt and pepper

Instructions

  • 1. In a glass bowl combine all ingredients with a pinch of salt and pepper and fold gently.
