Bow Tie Pasta Salad with Avocado, Tomato, Roquefort and Bacon makes a great summer side dish. To make it vegetarian simply eliminate the bacon. You can make ahead of time just wait to add the bacon and avocado right before serving.

Ingredients
- 1 lb bow tie pasta
- 2 vine-ripe tomatoes diced
- 1 avocado cut into small pieces
- 3 green onions chopped
- 4 slices fried smoked bacon chopped
- 1/4 cup crumbled Roquefort
- 1/4 cup chopped Italian parsley
- 1/4 cup extra-virgin olive oil
- Salt and pepper
Instructions
- 1. Bring a large pot of salted water to a boil cooking pasta until al'dente
- 2. Pour pasta into a colander draining well and transfer to a large glass bowl
- 3. Drizzle 1/2 the olive oil over top adding Roquefort and gently fold to combine allowing to rest until room temperature
- 4. Add tomatoes, green onion, avocado, remaining olive oil, teaspoon of salt, pinch of pepper and gently fold
- 5. Top with parsley and bacon and serve immediately
