The tomato is one of the most used ingredients for chefs and home cooks alike. This Italian recipe of bruschetta is a very popular dish made all around the world. There are so many versions of bruschetta. But for me this traditional Italian recipe of brushetta is my favorite. You can be as creative as you wish and perhaps adding some Mediterranean flare will give it a whole new look at taste for you. Remember, The Social Chef philosophy on cooking is…there are no rules in the kitchen. So try adding artichoke hearts, capers, olives or anything else that fits your palate. And who said it has to be on bread, try it over pasta or on top of a portobello and grill it. Go ahead…break the rules.

Ingredients
- 8 vine ripe tomatoes, chopped, seeds removed
- 1/4 cup diced red onion (soak in cold water for 10-minutes and drain)
- 1 garlic clove minced
- 3 tablespoons chopped fresh basil
- 1/4 cup extra-virgin olive oil
- Pinch of salt and pepper
- 6 slices Tuscan bread cut 1/2 inch thick rubbed with fresh garlic
- Olive oil as needed
Instructions
- 1. Combine all ingredients in a glass bowl with a few pinches of salt, pepper and fold
- 2. Rub bread with fresh garlic clove, drizzle with olive oil and toast under broiler
- 3. Using a spoon top over bread and serve
