When we think of Italy we usually think of pasta…unless of course you’re a cheese lover. This Caprese Salad with Arugula and Fresh Basil needs no introduction to those who live in Italy or for those who have traveled to this gastronomic country. Being the United States is a country with such diverse people, many supermarkets and specialty stores carry cheeses imported from Italy. There is fresh mozzarella, buffalo mozzarello and my very favorite, burrato. And believe me, there is a diffrence. Make sure to use a good mozzarella cheese as well extra-virgin olive oil.

  • 1 lb buffalo mozzarella sliced 1/4 inch thick
  • 2 vine-ripe tomatoes
  • Fresh basil leaves
  • Extra-virgin olive oil
