Chicken Quesadillas With Creamy Chipotle Sauce

Hi foodie friends of The Social Chef, I am Jodie Chapman from Jodies Kitchen sharing my chicken quesadillas recipe with creamy chipotle sauce. Chicken quesadillas is something we eat regularly at home and I love filling them with many different ingredients. Chicken is one of our favorites and this particular quesadilla goes well with the delicious Smokey taste of the Chipotle Cream sauce. The quesadilla itself is very crispy and the Chicken inside is moist, tender and full of flavor.

Ingredients

  • Chipotle Cream Sauce:
  • 1/2 cup sour cream
  • 2 tbs. Chipotle in adobo diced (can take out seeds)
  • 2 tbs. Lime juice
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • Quesadillas:
  • Shredded chicken
  • Roasted red peppers
  • Cilantro Mexican melting cheese of your choice-I used a mix
  • Tortilla shells

Instructions

  • 1. Chipotle Cream Sauce:
  • 2. Mix together Sour cream,chipotle, lime juice,salt and pepper. Chill atleast 30 minutes before topping your quesadillas. Add adition toppings if preferred
  • 3. Quesadillas:
  • 4. Add prefered amounts of each ingredient for the quesadilla ( Chicken,roasted peppers, cilantro, cheese) between two tortillas. Cook on each side until light golden brown and crisp
  • 5. Place all ingredients between your shells and cook on both sides until golden brown. I did mine in a lightly oiled skillet
