Chicken with Pesto and Roasted Pepper Panini

I never was a big fan of sandwiches until I had Ciabatta bread and then the turn on for me was when it was used to make a panini. I love the crunch of the bread when grilled. After I had my first panini I was hooked and I went out and purchased a panini machine within a week and I use it at least once per week. Not just for making panini but to make vegetables, pancakes, eggs and so on. As a matter of fact I used my panini press machine to roast my peppers and to make the chicken in this sandwich.

Ingredients

  • 1 Chicken breast fat trimmed, pounded thin
  • Homemade pesto recipe
  • 3 sliced tomato
  • 1 pepper roasted
  • Ciabatta bread
  • Provolone cheese or cheese of your choice

Instructions

  • 1. Season chicken breast with salt, pepper and Italian Seasoning.
  • 2. Heat panini machine to medium high and cook chicken for 4-5 minutes on each side.
  • 3. Remove, wipe panini machine clean.
  • 4. Cut Ciabatta bread length wise and coat each piece of bread with pesto.
  • 5. Place a few slices of cheese on bottom piece, add chicken roasted peppers, tomato and top with more cheese.
  • 6. Place remaining piece of Ciabatta bread on top and place in panini press preheated on high for 4-6 minutes or until bread is crunchy.
