
Colossal Shrimp with Garlic, Butter and Lemon on Tuscan Toast

Shrimp with garlic, butter and lemon have been done in just about every possible way imaginable. The good news is it never gets old and always tastes great. The colossal shrimp may be substituted with large shrimp, which of course is smaller than colossal and a smaller style bread like French bread toast for a slightly lighter appetizer. This recipe was topped off with some Panko and placed under the broiler for added texture. It’s a super appetizer for an elegant dinner.

Ingredients
- 4 colossal shrimp shelled, deveigned, rinsed and pat dry
- 4 cloves garlic minced
- 4 tablespoons unsalted butter
- 3 tablespoons extra-virgin olive oil
- 1/2 lemon juice
- 4 tablespoons Panko
- Garlic Toast
- 2 slices Tuscan bread 1-inch thick
- 1 garlic clove peeled
- 2 tablespoons dried Italian seasoning
- Extra-virgin olive oil
Instructions
- 1. Preheat oven to 425
- 2. Using an oven proof skillet add olive oil, 1 tablespoon minced garlic and place in oven until garlic starts to brown, discard garlic
- 3. Season both sides shrimp with salt and pepper
- 4. Add butter, remaining garlic and shrimp baking for 3-minutes
- 5. Turn shrimp, squeeze lemon over shrimp, 1 tablespoon of Panko on each shrimp and bake until slightly golden brown
- 6. Place two shrimp on Tuscan toast, drizzle pan drippings over shrimp and toast and serve with a lemon wedge
- 7. Tuscan Toast
- 8. Rub garlic clove over bread
- 9. Using a pastry brush lightly coat one side of bread
- 10. Sprinkle Italian seasoning on both sides and place in oven until light brown
