Hard to beat a good recipe for fish and chips especially if you have good fresh fish. My Corona battered fish and chips with chipotle yogurt sauce will make your mouth water and your tastebuds burst. To make the fries simple cut into wedges and pat dry cooking in the oil you are frying the fish in first at 375 degrees and then hold in the oven at 300 degrees until your fish is ready to serve.

Ingredients
- 1 1/2 lb cod filet cut into 3 oz pieces (skin and bones removed)
- Vegetable oil for frying
- 1 1/2 cups flour
- 1/2 cup corn starch for dredging more if needed
- 2 teaspoons salt
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 teaspoon baking powder
- Pinch of fresh pepper
- 1 bottle Corona beer at room temperature

Instructions
- 1. Using a deep medium size pot adding oil to about 1/2 full bringing oil to 350 degrees
- 2. Season both sides of fish with with salt and pepper
- 3. In a glass bowl combine flour, baking powder, paprika, garlic powder, baking powder, salt, pepper and beer and whisk until combined and foamy and no lumps
- 4. In another dish add corn starch
- 5. Dredge fish pieces in corn starch transferring to beer batter and gently place fish into hot oil cooking until golden brown about 2-minutes per side depending on thickness
- 6. Transfer to draining paper then place on a backing rack and place in oven at 300 degrees to hold until remaining fish is done
