Double Cut Pork Chop with Coriander, Thyme and Rosemary

Pork, also known as the other white meat. Europeans eat a lot of pork, lamb and goat while Americans tend to eat more red meat. This herb grilled double cut pork chop makes for an elegant dinner. When I was a kid we ate pork chops often but my mother made them coated in a popular mix back then called Shake n Bake. This alternative is much healthier and very simple.

Ingredients

  • 2 double cut pork chops
  • 1 teaspoon coriander
  • 1 teaspoon fresh chopped thyme
  • 1 teaspoon fresh minced rosemary
  • 1 teaspoon ground garlic
  • Salt & pepper
  • vegetable oil for brushing

Instructions

  • 1. Preheat grill to 450 degrees
  • 2. In a small dish combine thyme, coriander, garlic and rosemary and stir
  • 3. Using a pastry brush lightly coat pork chops with vegetable oil
  • 4. Generously season both sides of pork chop with salt and pepper
  • 5. Sprinkle seasoning mix on entire pork chop
  • 6. Allow to rest while grill reaches desired temperature
  • 7. Lightly brush grill with vegetable oil to prevent sticking
  • 8. Place pork chop on grill over direct heat to sear, about 4-minutes per side
  • 9. Move pork chop over indirect heat cooking until it reaches an internal temperature of 135 degrees. Remove from grill and place on a plate and cover loosely with foil to keep warm allowing to rest for 5-minutes and until it reaches in internal temperature of 145 degrees. NOTE: Pork chop will continue to cook once removed but make sure the center reaches 145 degrees using a meat thermometer before eating.
