This may be the best shrimp I’ve ever had on the grill. It was only an accident this recipe occurred because I had leftover Chipotle Peppers in Adobo Sauce that I didn’t want to throw out. I love spicy food so if you are not one to like spicy food then either use less Chipotle peppers or simply pass on this recipe. But this Grilled Shrimp with Chipotle Peppers in Adobo Sauce, Cumin and Lime Marinade makes a great appetizer.

Ingredients

  • 12 medium shrimp, peeled, deveined, rinsed & patted dry
  • 3 Chipotle peppers in Adobo sauce pureed
  • 1/2 fresh lime juce
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 pinch fresh pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried garlic ground from a garlic mill
  • Garnish with 1 tablespoon chopped green onion and a lime wedge
  • 2 skewers

Instructions

  • 1. Using a blender, add all ingredients and puree.
  • 2. Place 6 shrimp on each skewer.
  • 3. Using a pastry brush coat both sides of shrimp, place on a plate and refrigerate 30-min or longer covered.
  • 4. Preheat grill on high to get metal grates really hot.
  • 5. Reduce heat to medium and immediately place shrimp on cleaned grill.
  • 6. Grill 2-minutes per side or until done.
  • 7. Garnish with green onion and fresh lime.
