Homemade Greek Gyro

There are so many foods of the world that I can always eat and being in Greece the gyro happens to be one of those foods. After dining in some fantastic places that specialize in making gyro in Athens, I was pretty much sold on the fact that you just cannot make a gyro without the spit they use to cook it. That had been not only my consensus but the opinion of others who I had previously asked and so I took it as gospel. But for some unknown reason I was ordering some meat at the local butcher in Athen last week when I struck up a conversation with the owner (who I totally respect his opinion) about making gyro. He confirmed the spit is the key but that you can make them very good at home. So this recipe is not 100% mine, only a few spices I added to alter it. Being I was making this gyro for my Greek friends and they gave rave reviews, I decided it was worth the share for my food friends. I hope you like it and it is a little time consuming…but worth it. And do not forget to make homemade tzatziki sauce and every gyro I’ve had in Greece has some French fries on top.

Ingredients

  • 1 3/4 lb ground pork
  • 1/4 lb bacon chopped (uncooked)
  • 1 yellow onion pureed, liquid drained
  • 4 garlic cloves minced
  • 2 tablespoons dried oregano
  • 1 tablespoon salt
  • 1 teaspoon ground pepper
  • 2 tomatoes chopped
  • 1/2 red onion
  • 1/2 cup shredded lettuce
  • French fries
  • 15 pocketless pita lightly grilled
  • Homemade tzatziki for garnish (optional)

Instructions

  • 1. Using a large glass bowl combine pureed onions, minced garlic, salt, pepper, oregano with ground pork and chopped bacon and fold with your hands
  • 2. Place mixture in a food processor and puree
  • 3. Using a meat loaf pan or bread pan, add mixture and press it into pan to form a log, cover and refrigerate for 90-minutes
  • 4. Preheat oven to 350 removing mixture from refrigerator for 20-25 minutes prior to baking
  • 5. Bake uncovered for 50 minutes transferring to a rack to cool for 30-minutes.
  • 6. Then refrigerate for 60-minutes
  • 7. Remove from refrigerator while heating a grill to high
  • 8. Slice pork loaf into very thin slices and grill
  • 9. Place pita on grill for 1-2 minutes per side just to warm
  • 10. Place sliced grilled pork on pita and garnish with lettuce, onion, tomato, tzatziki and French fries
