Moms Peanut Butter Pie with Graham Cracker Crust

My food friends that follow The Social Chef know very well that desserts are not something I really enjoy to make. Mostly because I am not a fan of dessert but I am a fan of tiramisu a HUGE fan. This was requested from a friend and so I consulted my mother who enjoys to bake. So here is moms peanut butter pie with graham cracker crust. Warning…it’s really rich.

Ingredients
- 1 cup creamy peanut butter
- 1 1/4 cup confectionery sugar
- 1 1/2 cup heavy whipping cream
- 8 ounces Philadelphia cream cheese at room temperature
- 1 teaspoon pure vanilla
- Graham cracker crust
- 1 1/2 cups graham cracker crumbs bout 12-15 graham crackers
- 1/2 stick of melted butter (more if needed)
Instructions
- 1. Preheat oven to 375
- 2. Combine the graham cracker crumbs in a bowl with butter and using your hands combine well.
- 3. Place the graham crackers in a pie tin while using your hands/fingers to form the graham cracker around the dish evenly about 1/8 inch thick pressing firmly adding more butter if needed
- 4. Bake 10-12 minutes making sure not to burn then placing on a cooling rack for 30-minutes
- 5. While graham cracker crust is baking combine peanut butter, cream cheese and whip until smooth using a mixer
- 6. In a mixing bowl combine peanut butter, cream cheese and whip until smooth
- 7. In a separate bowl add 3/4 cup heavy cream, 3/4 cup sugar and whip until thick
- 8. Add whip cream mixture to peanut butter and whip until combined and smooth
- 9. In same bowl heavy cream was whipped add remaining heavy cream, remaining sugar, vanilla and whip until thick
- 10. Add peanut butter mixture to graham cracker crust and spread evenly
- 11. Add whipped cream on top of peanut butter spreading evenly and refrigerate for 3-4 hours before slicing
