Mussels were something I never liked when I was a kid. Now I just love them. This dish may be the best recipe for mussels I’ve ever created. So coming up with a name for it was the only issue I had. I think Mussels ala Social Chef will be the name. I hope you enjoy my Mussels ala Social Chef.

Ingredients
- 1 ½ lb Mussles bearded and scrubbed clean
- 1 tomato diced, seeds removed
- 3 tablespoons diced shallots
- 2 cloves garlic minced
- 1 cup low sodium chicken broth
- 2 tablespoons Sambucca
- 1/3 cup Italian Parsley chopped
- 1 tablespoon olive oil
- ½ lemon juice
- sea salt
- Ingredients for Butter Sauce: 3 tablespoons real butter
- 1 tablespoon olive oil
- 2 shots white wine
- ½ medium sweet onion diced
- 2 cloves garlic minced
- 1/3 heavy cream
- 1 lemon zested and ½ juiced
- Sea salt
Instructions
- 1. Using a sauté pan over medium heat add olive oil, onion, pinch of salt and sauté for 5-minutes
- 2. Add garlic and sauté for 2-minutes.
- 3. Increase heat to medium high and add wine stirring for 1-minute and reduce heat to medium-low.
- 4. DO NOT BURN GARLIC and ONION
- 5. Add Cream and stir for 1-minute then add lemon and lemon zest, stir.
- 6. Remove from stove and hold.
- 7. Using a large pot over medium heat add olive oil, shallots, pinch of salt and sauté for 4-minutes
- 8. Add garlic and sauté for 2-minutes.
- 9. ncrease heat to medium high adding chicken broth/stock bringing to a boil and add Sambucca and stir
- 10. Reduce heat to a simmer adding mussels, tomatoes, lemon juice and cover until open about 2-4 minutes.
- 11. Once mussels begin to open add butter sauce, parsley, stir and serve immediately when all mussels are open.
- 12. Throw out mussels that do not open.
