New York Strip Steak Topped with Jumbo Lump Crab and Burnt Butter

Not everyone enjoys a good steak but I certainly do. New York Strip steak isn’t my favorite cut of beef but it was half price so I couldn’t resist. I had some jumbo lump crab I had purchased for another dish but opted to make something different. Normally I do not do much to lump crab as it needs nothing to compliment the sweet flavor and personally I prefer it over lobster. At first I was going to make a hollandaise sauce but didn’t want to alter the flavor of the crab. I chose to burn some butter then gently sauté the crab and serve it over the steak. If you never had burnt butter you may never eat lobster, clams or crab another way.

Ingredients
- 8-oz jumbo lump crap
- 2 New York Strip Steaks lightly coated in vegetable oil, seasoned with salt and fresh cracked pepper at room temperature
- 1 tablespoon vegetable oil
- 1/2 stick butter
Instructions
- 1. Using a small saucepan over medium high heat add butter and cook until golden brown, about 10-12 minutes
- 2. Preheat oven to 425 placing rack upper half of oven
- 3. Using a cast iron skillet or other over proof pan on high for 8-minutes or just until it starts to smoke place steaks and cook for 1 1/2 - 2 minutes turning and sear other side for same time
- 4. Transfer pan to oven and cook for 4-minutes turning once and cooking for another 4-minutes
- 5. Remove from oven placing steak on a cutting board and tenting with foil for 12-minutes
- 6. Return saucepan with butter to stove turned to medium gently adding crab making sure not to break apart and gently fold until crab is warm
- 7. Place steaks on plate topping with crab and serve
