My alter ego is Monica Geller. I love to clean, do laundry…………pick lint off of unsuspecting strangers in the checkout line at the grocery store. *shifts eyes back and forth* I may be known as The Lazy Mom, but I am one hell of a cleaner. I hate to do dishes, though. My fingers get pruny. Water gets everywhere. And then I have to unload the dishwasher. Or pay the teenager to do it for me. That’s why this recipe is pretty dang awesome. I can use up those moldy bananas taking up space on my counter AND I can do it all in one bowl. That’s right. One bowl. And if you move fast enough, the batter remnants will be all yours for the licking. Shazaam!
About the author…
Hi everyone! My name is Trisha and I call myself The Lazy Mom. No, I don’t sit around the house in my robe and bunny slippers all day. Okay, most days I don’t do that. But I do like to cut corners so that I can spend more time with the ones I love and less time in the kitchen. Some may call that inventive. I prefer lazy.
My blog is about recipes that are quick, easy, and within a $20/day budget. I try to create recipes that are kid-friendly but still allow us adults to feel like we aren’t eating hot dogs and mac and cheese every night. Don’t worry – I have recipes for those, too!
My blog also follows the “eat once, cook twice” philosophy. When possible, I provide Round Two Recipe options so that leftovers can be remade into something glamorous to stretch your budget.
There is humor in this blog. I sometimes swear. I even fail a time or two, but I certainly explain why and how not to follow in my footsteps. I am a teacher by nature, so I also feature Cooking Basics 101 seminars with some basic how-to’s on broad topics.
