Pasta with Creamy Smoked Salmon Dill Sauce

One of my favorite foods is pasta, especially one that is quick, simple and delicious. But what makes a good pasta dish for me is the sauce which accompanies it. This pasta with creamy smoked salmon dill sauce is a very rich dish and perfect for large parties. Best served as an appetizer or a side dish and as much as I hate to say it, just a small quantity. The combination of salmon with cream cheese is delicious and for a little variety you might add some steamed broccoli cut into 1-2 inch pieces or even add capers to the dish or a little squeeze of fresh lemon. My favorite thing about cooking is to never set limits on any dish. So go recreate it to fit your palate.

Ingredients
- 10-12 oz smoked salmon chopped
- 8 oz cream cheese at room temperature
- 6 tablespoons unsalted butter
- 1 cup hot milk
- 1/4 cup flour
- 1/2 cup of canned chopped tomatoes
- 3 tablespoons of chopped dill plus extra for garnish
- 1/2 cup diced yellow onion
- 16 oz penne pasta or pipe rigate
- Salt & pepper to taste
Instructions
- 1. Bring a large pot of salted water to a boil adding pasta cooking until 1-minute pacjakage suggests for al dente
- 2. In a pan over medium high heat melt butter adding onion and sautéing for 5-minutes
- 3. Meanwhile in a separate small pot over medium heat add milk eanwhile
- 4. Add flour to onions and whisk for 1-minute to cook out the flour
- 5. Pour hot milk over onions a little at a time and whisk until thick, about 2-minutes
- 6. Combine tomatoes, cream cheese and fold
- 7. Add 2/3 chopped salmon, teasoon fresh ground black pepper and using a hand mixer puree until smooth
- 8. Drain pasta reserving 1 cup of pasta water to add to sauce if too thick
- 9. Combine pasta and dill to sauce folding well and serve
- 10. Garnish with dill and grated reggiano cheese (optional)
