I discovered this protein sausage by Lightlife and it really is very good. There never will be anything like real sausage but this is my second choice. It’s healthy and I actually prefer it for breakfast to traditional sausage because for breakfast I do not like so much fat. When it comes to Italian sausage and pepper then I will use the regual sausage. Little changes in eating habits can make a huge difference. Ingredients
- 1 medium potato cleaned and sliced thin
- 2 eggs beaten
- 1/3 cup chopped red, green or yellow peppers
- 1/3 cup chopped onion
- 1/3 cup veggie protein sausage cut in small pieces
- 1 tablespoon olive oil
- 1 teaspoon unsalted butter
Instructions
- 1. In a non-stick skillet over medium high heat add olive oil and butter
- 2. When butter has melted add potato slices and a pinch of salt.
- 3. Fry until golden brown. Remove potatoes from pan.
- 4. Add peppers, onion, pinch of salt and sauté for 5-minutes
- 5. Push to side of pan and add veggie sausage sauté for 3-minutes.
- 6. Fold veggie sausage, onions and peppers together and pour eggs over top
- 7. Let stand for 1-minutes then toss in potatoes and fold until egg is cooked, about 2-3 minutes.
