I have come to really like quinoa. It’s very healthy and is very simple to make. Quinoa takes on the flavors of what you add to it especially what you cook it in. I really like to cook mine in vegetable, chicken or beef stock as it absorbs those flavors and makes a great dish. Combining the cranberries, red rice and kale gives this dish a variety of textures and a super flavor. Especially with the vegetable broth.  My favorite is turkey stock to cook my quinoa with but it all depends what I am making as to what my choice of stock will be. This recipe of Quinoa, Red Rice and Kale can be a side dish or the main dish. It can be served hot or cold.

Ingredients

  • 1 cup quinoa
  • 1/4 cup red rice
  • 1 bunch kale rinsed stem removed and chopped
  • 2 cups vegetable broth
  • 2 garlic cloves minced
  • 1 medium sweet onion chopped
  • 1 carrot chopped
  • 1/2 cup dried cranberries rehydrated in boiling water for 15 minutes and drained
  • 1 tablespoon olive oil
  • Salt and pepper

Instructions

  • 1. In a saute pan over medium heat add olive oil, onion, carrots and garlic and saute for 5-minutes.
  • 2. In a small pot add rice and water based on packagae directions and cook until done.
  • 3. Remove from stove covered to keep warm.
  • 4. In a medium pot combine quinoa and vegetable broth and bring to a boil.
  • 5. Redcue heat to a simmer and cover cooking for 15-minutes.
  • 6. Combine rice, onion, carrots, garlic, cranberries and kale to quinoa stir well and cover for 3-5 minutes.
