But Fifi Lish came up with name for this dish, Ragin’ Cajun Stuffed Peppers. A perfect name for this dish. I really appreciate all my food friends on Facebook for helping to create this dish and for those who participated in creating a name. Rachel Elizabeth, Joy Sim Love, Karen Bauer and MomSoPolitan offered some suggestions on choice of ingredients and I really appreciate it. Then I called on my food friends to name this dish and I was loving all the participation and great suggestions. Ingredients

  • 1 lb Andouille sausage chopped
  • 1 cup Jasmine rice, rinsed and drained
  • 1 14oz can black beans rinsed and drained
  • 1 14oz can diced tomatoes
  • 1 cup vegetable stock
  • 1 bag baby spinach
  • 2 cobs of corn, sliced off cob
  • 1 medium red onion chopped
  • 4 garlic cloves minsed
  • 1 tablespoon smokey paprika
  • 1 teaspoon cumin
  • 3 tablespoons olive oil
  • Salt & pepper

Instructions

  • 1. Preheat oven to 400 degrees
  • 2. In a large skillet over medium heat add olive oil and sausage and sauté for 8-minutes
  • 3. Add onion, pinch of salt and sauté for 4-minutes
  • 4. Add garlic sautéing for 1-minute
  • 5. Transfer to a bowl and hold reserving juices in pan
  • 6. Add rice and stir well to coat with remaining liquids in pan, 4-minutes
  • 7. Increase heat to high adding vegetable stock, cover and reduce to a simmer for 6-minutes
  • 8. Add 2/3 corn, spinach, cumin, smokey paprika, stir for 1-minute
  • 9. Add sausage mixture, 2/3 diced tomatoes, fold and remove pan from stove
  • 10. Using a spoon fill each pepper with mixture, dividing remaining diced tomatoes on top and place in an oven proof dish with 1-cup of water on bottom of pan
  • 11. Bake covered for 35-45 minutes
  • 12. Meanwhile using a cast iron pan over high heat for 3-4 minutes add 1 tablespoon oil, remaining corn, pinch of salt and sear for 3-4 minutes until starts to brown, transfer to plate and hold
  • 13. Transfer individual peppers to plates, garnish with remaining seared corn and a sprinkle of smokey paprika
