Sea Scallops Wrapped In Smoked Bacon

A wonderful combination, sea scallops wrapped in smoked bacon. Not something I’ve ever made. I’ve had them at many functions. Makes a wonderful appetizer for a social gathering or an elegant party. While you can use bay scallops they are far too small and will be way overcooked. Always use large sea scallops for this recipe. I also suggest a good hickory smoked bacon cut thick. Two flavorful ingredients makes for a simple meal or appetizer. Enjoy!!

Ingredients
- 3 large sea scallops seasoned with salt and pepper
- 3 slices hickory smoked bacon cut thick (long enough to wrap around entire scallop)
- Salt & white pepper
Instructions
- 1. Using a cast iron pan over medium heat add bacon and fry for 5-minutes on each side until slight brown but pliable, (NOT CRISP)
- 2. Meanwhile have the oven preheated to 400 degrees with baking rack placed toward the top
- 3. Transfer bacon to paper towel to drain reserving bacon grease
- 4. Wrap each seasoned scallop with bacon and slide a toothpick at the end of bacon strip into the scallop
- 5. Place each scallop back into pan with bacon grease, place in oven and cook for 5-minutes on each side or until done. Be careful to not overcook.
- 6. Remove pan from oven, squeeze a little fresh lemon over top
- 7. Using a spatula transfer on top of draining paper to remove excess bacon grease and serve
