Shrimp, Andouille Sausage, Red Skin Potatoes and Corn on Skewers with a Cajun Rub

Ingredients
- 18 large shrimp in shell
- 3 ears of corm cut into
- 2 inch pieces
- 1 lb Andouille sausage cut into 1 inch thick pieces
- 8 small red skinned potatoes halved
- Cajun Seasoning
- 2 tablespoons sea salt
- 2 tablespoons freshly ground pepper
- 1 teaspoon cayenne pepper
- 1 tablespoon smoked paprika
- 2 tablespoons paprika
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 tablespoons dried oregano
- Vegetable oil
Instructions
- 1. Bring a pot of water to a boil adding potatoes and corn for 5-minutes
- 2. Drain and shock in ice water
- 3. Cut the shell of the shrimp along the top to clean then using a knife cut and remove the vein
- 4. Combine all ingredients for cajun seasoning in a small bowl and stir well
- 5. Place corn, shrimp, sausage and potatoes on skewers and using a pastry brush lightly coat with vegetable oil
- 6. Set skewers on a baking sheet and sprinkle both sides with cajun seasoning mix
- 7. Heat a grill over medium high for 10-minutes
- 8. Add skewers and cook on each side for 4-5 minutes and serve
