Social Chef Healthy Potato Salad

The recipe was inspired by a Facebook friend who suggested a potato salad recipe that was pretty healthy. I opted out of using the mayonnaise and substituted low-fat yogurt to make a healthy potato salad. If I were to make it again I would add some dill but even without it this was a home run at the party I attended. Try it and let me know what you think. I love when my social media friends give me suggestions and ideas…makes The Social Chef live up to its name.

Ingredients

  • 3 1/2 - 4 lbs medium sized red potatoes with skin quartered
  • 1/2 each red, green and yellow pepper diced
  • 3 tablespoons diced red onion soaked in cold water for 10-minutes
  • 1 tablespoon Dijon mustard
  • 1 tablespoon low-fat plain yogurt
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 3-4 green onion chopped
  • 2-3 pinches sea salt
  • Fresh ground pepper

Instructions

  • 1. Bring a large pot of salted water to a boil adding potatoes cooking until tender 8-10 minutes
  • 2. Drain well and refrigerate to cool
  • 3. In a measuring cup combine mustard, vinegar, yogurt, olive oil, two pinches of salt and stir well
  • 4. Remove potatoes from refrigerator transferring to a large pasta or salad bowl adding peppers
  • 5. Drizzle dressing as needed gently folding and adding green onion as you fold
  • 6. Add pepper and salt as needed
