Thai Chicken Satay with Peanut Sauce

I love Thai food and I had Thai chicken satay with peanut sauce a while ago that my friends mom made. It was fantastic so I decided to give it a crack. Satay in Thailand is a very popular dish but isn’t just made with chicken. They actually use a variety of meats such as beef, pork and believe it or not, goat. Apparently goat is a pretty popular dish in Thailand and I am pretty sure I have never had it but it looks like I am going to be trying it this weekend.

They used this yellow spice called turmeric which had a really bright yellow color. I didn’t get to watch the preparation as it was prepared the day before and was in a dish marinating for 24-hours. I was a little amazed at all necessary ingredients needed in order to make this dish. It was served as a social dish (meaning not sitting just had people helping themselves from plates throughout the kitchen) and there had to have been at least 100-120 skewers.

So here goes my attempt on the authentic Thai Chicken Satay with Peanut Sauce. I hope my Food Lover Friends enjoy it. It makes a super party dish.

Ingredients

  • 1 lb chicken breasts, cut into 4 inch strips
  • 1 cup plain yogurt
  • 1 tablespoon ground tumeric
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon minced garlic
  • Fresh cilantro leaves
  • Wooden skewers 6-inches long
  • Thai Peanut Sauce: 1 1/2 cups creamy peanut butter
  • 1/2 cup coconut milk
  • 2-4 tablespoons warm water
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon fresh ginger, minced
  • 1 lime juiced
  • 2 garlic cloves, minced

Instructions

  • 1. Thai Chicken Satay: Soak skewers in water for 20-30 minutes before grilling
  • 2. Combine all ingredients into a large glass mixing bowl and fold well
  • 3. Place chicken strips in Thai sauce and fold to coat.
  • 4. Cover Grill on each side 4-minutes and serve.
  • 5. Thai Peanut Sauce: Place all ingredients into a blender except for water.
  • 6. Pusle gently adding a little warm water at a time until desired consistancy.
  • 7. Add some chopped peanuts on top for serving. (optional)
