I never thought of an Asian Taco before and not sure how it even came to mind. I guess being I had only one tortilla shell and wanted to use it and had 3 shrimp also, I decided to make a Asian taco with shrimp and fried rice. Almost all the ingredients I had left over from making shrimp egg rolls so I just threw it together and wow, it turned out great. This recipe was for only one taco so just multiply as needed.

Ingredients

  • 3 large shrimp, deveined, rinsed and pat dry
  • 4 pea pods
  • 4 slices each of green, red and yellow pepper (use whatever you want)
  • 1 teaspoon minced fresh ginger
  • 2 garlic cloves minced
  • 4 tablespoons low sodium soy sauce
  • 4 tablespoons sesame oil
  • 1 teaspoon fish sauce
  • 4 tablespoons chicken broth
  • 1/2 cup Asian slaw
  • 1 egg
  • (Optional) purple cabbage and Yum Yum sauce
  • 1/3 cup cooked rice
  • 1 flour tortilla

Instructions

  • 1. In a small dish combine soy sauce, chicken broth, 1 tablespoon sesame oil, 1/2 of the ginger, 1/2 of the garlic and fish sauce, stir to combine
  • 2. Add shrimp, turn to coat, cover and refrigerate for 30-minutes
  • 3. To make Fried Rice:
  • 4. Using a non stick pan over medium high heat add 2 tablespoons sesame oil, remaining garlic and ginger and sauté for 1-minute
  • 5. Add Asian slaw and sauté for 2-minutes stirring often transferring to a bowl
  • 6. Add the marinade from the shrimp in the pan then add rice allowing and stir to combine and sauté for 3-minutes
  • 7. Push rice to the corner of pan, add egg and scramble
  • 8. Add Asian slaw back to rice fold all ingredients together and sauté for 2-minutes transferring to a plate
  • 9. Shrimp:
  • 10. Add remaining sesame oil, and shrimp and sauté for 3-minutes on each side transfer to a plate and hold
  • 11. Add vegetables and sauté for 2-minutes
  • 12. Place some fried rice on taco, vegetables, shrimp and garnish with purple cabbage, Yum Yum sauce and sesame seeds
