There is always a good time for torellini pasta salad but none better than summer. This simple yet elegant looking pasta dish is simple, quick and is oh so perfect for a barbeque, picnic and is even better when arriving home from a long day of work.
As long as I live I will never forget the homemade tortellini soup my mother made. I’m not sure just how many homemade tortellinis’ my mother made but nonetheless, they were served sparingly. I’m not sure if I recall their taste as much as I remember my mother saying before every time you were allowed to get a bowl was, “you better eat them because they are a lot of work”. I never really understood what she meant until I made homemade lasagna and only then did I realize it’s a long and tedious process. To this day I have never learned just how she makes them. I hope one day my mom shares the kitchen with me and shows me just how to make them.
You can venture out on your own and make homemade tortellini’s or you can buy them fresh in your local grocery store. There are a wide variety of tortellini’s available. I personally like the ones with 3-cheeses for this dish and the combination of spinach and plain add a great taste and super presentation.

Ingredients
- 1 20 oz package of fresh tortellini's stuffed with cheese
- 1/4 cup chopped
- !/4 cup chopped red and yellow peppers
- 12 kalamata olives sliced or black olives
- 1/2 teaspoon dried Italian seasoning
- 1 tablespoon chopped red onion
- 1/4 cup sliced carrots
- 4 tablespoons red wine vinegar
- Extra-virgin olive oil infused in garlic (as needed)
- Pinch of salt and pepper
Instructions
- 1. Cook tortellini in salted water to al' dente drain and run cold water to cool so it won't continue cooking
- 2. Place tortellini's in a large glass bowl adding olive oil immediately so pasta does not stick
- 3. Add remaining ingredients and toss
- 4. Serve immediately or chill and serve later
