
Pork Roast with Orange Zest, Rosemary, Sage and Garlic Rub

I love pork…all kinds. Pork chops, (thick cut) pork tenderloin, pork to make gyros, ground pork in my meatballs and many others. I seldom make a pork roast but I was watching a local cooking show where the chef was coating the pork roast in lemon zest, rosemary, thyme and garlic, added some olive oil and then rubbed in on the pork roast. I thought perhaps the lemon might be a bit strong so I made the same recipe but I added orange zest instead and I didm;t have fresh thyme so I used sage instead.

Ingredients
- 1 3lb pork roast resting on counter for 20-minutes
- 1/3 cup vegetable oil
- 2 tablespoons fresh minced rosemary
- 2 teaspoons fresh minced sage
- 3 cloves garlic minced
- Zest of 1 orange
- Vegetable oil
- 2 teaspoons corn starch (optional)
Instructions
- 1. Preheat oven to 350
- 2. In a measuring cup combine garlic, rosemary, sage, orange zest, teaspoon of sea salt, oil and stir
- 3. Pat dry the roast and using your hands coat the entire roast
- 4. Place roast on a roasting pan with rack adding 1/2-inch of water to the bottom of the pan
- 5. Bake in oven until internal temperature hits 145 degrees, remove and tent with foil for 12-15 minutes reserving liquids in the pan
- 6. Meanwhile make the gravy by place roasting pan over medium high heat adding corn starch and stir until thick
- 7. (Optional) You can add white wine to the drippings when you begin to make the gravy, about 1/4 cup
- 8. Slice roast about 1-inch thick and serve with gravy pan drippings
