I try to eat fish at least five times per week. Not to mention in S Florida there are all sorts of fresh fish to take advantage of. I had purchased a mango and if not used it was about to go bad. I also had a serrano pepper, fresh cilantro and a red bell pepper that I had to use up. I hate to waste food and being my mother is always preaching about wasting food I had to make something. So I ventured into the fruit salsa arena and prepared a mango salsa that was so light and refreshing which married perfectly with the Baked Tilapia. It would go perfectly with most any white fish. It’s light, healthy and can be prepared in minutes.

Ingredients
- 2 6 ounce pieces of tilapia seasoned with salt and pepper
- 1 teaspoon butter
- juice of 1/2 lime
- Salt & pepper
- Papaya Salsa: 1 ripe mango
- 1 lime zested and juice of 1/2
- 1 teaspoon olive oil
- 1/4 red pepper diced
- 1 small tomato diced
- 1 Serrano chile minced
- 2 teaspoons minced sweet onion
- 3 tablespoons chopped cilantro
- Salt and pepper
Instructions
- 1. Prepare salsa ahead of time at least for 30-minutes to allow all flavors to come together.
- 2. Using a glass bowl combine all ingredients and fold gently reserving 1 tablespoon of chopped cilantro for garnish.
- 3. Preheat over to 350
- 4. Spray a baking dish with non-stick cooking spray placing tilapia in dish.
- 5. Place 1/2 a teaspoon on each piece of tilapia squeezing limejuice over fish. Bake for 12-15 minutes.
- 6. Place fish on a plate, top with Mango Salsa and garnish with cilantro.
