Are you up for some healthy recipes? I can’t say this was a planned meal but day-1 of my biblical fast I wasn’t much in the mood to cook. I can only eat fruits, whole grains and vegetables and I had arugula for lunch so I needed something that would fill me up a bit. I love black beans and I had a ripe avocado so I thought, hey…why not make black beans and avocado. And so…there you have it. I have to tell you, it was really delicious. If I wasn’t on this Daniel Fast I would add chorizo to it, add a little white wine and cook it off. Stay tuned for that dish.

Ingredients
- 1 15 oz can black beans rinsed and drained
- 2 tablespoons diced onion
- 2 garlic cloves minced
- 1 tablespoon lime juice
- 1 cup vegetable broth
- 1/2 avocado cut into 1 inch pieces
- 1 teaspoon dried oregano
- 2 tablespoons cilantro
- Olive oil
Instructions
- 1. Using a sauté pan over medium high heat add 2 tablespoons olive oil, onion and pinch of salt cooking for 4-minutes
- 2. Add garlic, stir and sauté for 30-seconds
- 3. Add beans, vegetable broth and lime juice, cover and reduce to low for 30-minutes
- 4. Add avocado, oregano, stir and sauté for 2-minutes
- 5. Add cilantro, stir and serve with a drizzle of good extra-virgin olive oil
- 6. Garnish with cilantro (optional)
