Chicken Tequila Mexican Marinade

I am pretty sure there are few people who grill as often as I do. At least five meals if not more are made on the grill at my home. This is a simple dish of chicken tequila Mexican marinade with some spices I really love. You can use wraps and make fajitas or just plain for a healthier dish.

Ingredients

  • 2 chicken breasts cut into 2 inch thin strips
  • 1 teaspoon cumin
  • 3 tablespoons cilantro
  • 1/4 cup tequila
  • 1/2 cup vegetable oil
  • 1 lime zested and juiced
  • 1 clove garlic minced

Instructions

  • 1. Add all ingredients into a flat dish and mix to make marinade
  • 2. Add Chicken pieces into a bowl reserving 1/4 cup for brushing fold to coat chicken
  • 3. Gently fold chicken to coat
  • 4. Cover with and refrigerate for 1-hour or longer (best if 24-hours)
  • 5. Place on wooden skewers and grill for 8-10 minutes or done
  • 6. Serve with tortilla’s or serve plain with peppers and onions
