Chicken Wings with Chipotle and Honey Sauce

Do you like chicken wings? What about spicy food? There is something about spicy chicken wings that makes me want to keep on eating. My chicken wings with chipotle and honey sauce has gone through a variety of stages before I found what I felt was a perfect marriage of hot and sweet. You know my belief is you can’t please everyone so my suggesting is to keep adding honey and lime until you get it to your liking. Or…if you like it spicy than I suggest you add more chipotle peppers in adobo sauce to get your spice on. You also can choose a variety of ways to make your wings, grilled, fried or baked. You can also choose if you prefer them crispy or not. I love crispy chicken wings but I am not a fan of fried food and if I can avoid it then I do. In this recipe I baked them but coated them first for a crunchy bite.

Ingredients
- 10 chicken wings rinsed and pat dry with paper towel
- *2 chipotle peppers in adobo, I use 3 (more if you like it really hot)
- 2 tablespoons adobo sauce
- 1/2 cup honey
- 1 tablespoon soy sauce
- 1 teaspoon worcestershire
- 1/2 lime juiced
- 2 cloves garlic
- 1 1/2 cups flour
- 1 egg
- 1/4 cup heavy cream
- 1/4 cup fresh cilantro for garnish (optional)
- Salt & pepper
Instructions
- 1. Preheat oven to 425
- 2. Scramble egg in a small bowl adding cream and fold to combine
- 3. Using a small bowl combine flour, teaspoon salt, pinch of pepper and stir
- 4. Dip each wing in egg mixture then into flour tapping off excess flour
- 5. Place a wire rack over a cookie sheet placing each wing on rack
- 6. Bake for 25-minutes each side then rotate baking another 25-minutes or longer until golden brown
- 7. Meanwhile using a blender combine chipotle peppers, adobo sauce, honey, garlic, soy sauce, worcestershire, lime juice, pinch of salt and pepper and puree until smooth and hold
- 8. Remove wings from oven and drizzle chipotle and honey sauce over wings
- 9. Garnish with cilantro and serve with carrots, celery and blue cheese dressing
