There are many varieties of eggs Benedict. Without a doubt my favorite breakfast is eggs Benefict but it is hard to say which version out of all that I’ve ever had is my favorite. However, this eggs Benedict with Tennessee smoked bacon just might be my #1. I had been told from a friend about a company in Tennessee that is famous for their smoked bacon. After trying Benton’s Hickory Smoked Bacon I immediately placed an order and even though it took me a month to receive my order it was well worth the wait. - 2 English muffins halved
- 4 slices thick smoked bacon
- 4 slices ripe tomato cut into 1/4 inch pieces
- 1/2 cup baby arugula
- 1 jigger white vinegar
- Hollandaise Sauce
- 3 egg yolks
- 1-2 tablespoons fresh lemon juice
- 1/4 cup melted unsalted butter
- Pinch of cayenne pepper
