There are a wide variety of recipes for seafood salad or what some call “Frutti Di Mare”. The very popular Mediterranean Seafood Salad has taken a secure place on many seafood restaurants in the United States. For years the Europeans have enjoyed the Mediterranean Seafood Salad with its assortment of fresh fish. In addition numerous studies have proven the Mediterranean diet has benefitted the Europeans greatly and has become a staple in their diet.

The Mediterranean Seafood Salad is a very simple dish to prepare and can be made using the seafood of your choice. This extremely popular seafood salad tastes great on a hot summer day and is best if prepared a few hours in advance.

Ingredients

  • 1 lb extra-large shrimp peeled and deveined
  • 1 lb sea scallops or bay scallops
  • 1 lb cooked baby octopus with tentacles
  • 1 lb calamari rings and tentacles
  • 1 dozen littleneck or Manila clams, scrubbed and rinsed
  • 1 dozen muscles beards removed, scrubbed and rinsed
  • ½ cup chopped celery
  • 20 Greek olives, kalamata and green chalkidikis
  • ¼ cup extra-virgin olive oil
  • 2 garlic cloves smashed
  • 2 tablespoons white wine vinegar
  • 2 fresh lemons juiced plus one lemon cut into wedges for garnish
  • 2 tablespoons fresh Italian parsley chopped
  • Salt and pepper
  • *Poaching Liquid;
  • 1 lemon juiced and quartered
  • 2 bay leaves
  • 1 teaspoon sea salt

Instructions

  • 1. NOTE: Using a colander cook seafood and then place into a bowl of ice water for 2-3 minutes to cool then place into a larger bowl for preparing the Mediterranean Seafood Salad.
  • 2. Bring a large pot of salted water to a boil adding lemon juice, bay leaves and salt
  • 3. Add sea scallops for 3-minutes then into ice water
  • 4. Add shrimp to boiling water cooking for 3-minutes then into ice water
  • 5. Add calamari to boiling water for 3-minutes then into ice water
  • 6. Add octopus to boiling water for 4-minutes then into ice water
  • 7. Place clams and mussels into a pot with a squeeze of lemon juice, cover and steam until open discarding any that do not open
  • 8. Place in a large glass bowl with other cooked seafood
  • 9. Add olive oil, celery, garlic, lemon juice, olives, vinegar, and parsley, pinch of salt, fresh pepper and gently fold
  • 10. Cover and refrigerate for 1-2 hours and serve with lemon wedges
