Mediterranean Tomato Salad with Feta, Olives and Pine Nuts

This was inspired from a fb friend who offers great support to the Social Chef. It was during a fast that I created this very healthy Mediterranean tomato salad with feta, olives and pine nuts, which I am certain my vegetarian friends will enjoy this too. It makes a great lunch, a starter for dinner and is even better for summer barbeques or picnics. It’s simple to make and can be prepared in less than 15-minutes. My Mediterranean tomato salad with feta, olives and pine nuts is also very healthy.

For many in the United States they are preparing to reap the benefits of the spring sowing season. Fresh produce and herbs are slowly but surely coming into their own. Tomatoes will soon be mature enough for picking and the variety of ingredients in this Mediterranean tomato salad is welcomed by many who enjoy fresh produce. Ingredients

  • 1 tablespoon fresh cilantro
  • 1/2 cup cherry tomatoes halved
  • 12 Kalamata olives halved
  • 12 Green Spanish olives halved
  • 2 tablespoons pine nuts
  • 1/3 cup crumbled Feta cheese
  • 1/2 teaspoon cumin seed
  • 1/2 teaspoon coriander seed
  • 1/3 cup extra-virgin olive oil
  • 1 teaspoon chili powder and a pinch of cayenne pepper or if you have it, hot Mexican style chili powder.
  • Bib or Butter lettuce
  • Salt and pepper

Instructions

  • 1. In a non-stick skillet over medium high heat add pine nuts, cumin and coriander seed and brown. Make sure to shake pan often and do not burn.
  • 2. Add all other ingredients into a glass bowl and toss. Season with salt and pepper and serve over lettuce.
