Living a busy life and unable to eat as healthy as you wish because you don’t have the time or you’re simply exhausted? This light and healthy Orzo pasta salad is fantastic for all seasons and makes a wonderful lunch dish, dinner entree or party dish. It’s quick, simple and healthy.

For this Orzo Pasta Salad with Goat Cheese and Pine Nuts you can substitute Orzo Pasta with Gluten Free Orzo or Whole Wheat Orzo. If you prefer feta over goat cheese or even another type of cheese then break the rules and go for it!!

Ingredients

  • 1lb tri-color orzo
  • 12-16 cherry tomatoes halved
  • 1 cup tightly packed baby arugula
  • 1 red bell pepper chopped
  • 1/2 diced red onion soaked in cold water
  • 8 oz crumbled goat cheese
  • 1/4 cup extra-virgin olive oil
  • Salt & pepper to taste

Instructions

  • 1. Have all ingredients prepped and a large glass bowl ready for ingredients
  • 2. Bring pot of salted water to a boil adding orzo and cooking to package directions
  • 3. Drain pasta well placing in glass bowl adding olive oil and turning to cool
  • 4. Add all ingredients except arugula and fold adding salt and pepper to taste
  • 5. If serving immediately add arugula or cover and refrigerate adding arugula when ready to serve making sure to fold in arugula
