Pan Seared Black Sea Bass with Pineapple Salsa

Sea bass is one of my favorite types of fish to prepare and with a simple light pan sear and some pineapple salsa it always makes for a quick, simple and healthy dinner. One thing I sure miss about living in southeast Florida is the wide variety of fresh seafood. I had a place I would go to called Doris’ Italian Specialty Market and Bakery in Boca Raton that had such fresh seafood and the variety was endless. Sergio the owner would text me often the moment a delivery arrived and in 20-minutes I could be there. I really miss that.

Ingredients

  • 4 sea bass filets skin on
  • 1 cup diced fresh pineapple
  • 1/2 cup diced red bel pepper
  • 2 tablespoons cilantro (optional)
  • 2 tablespoons diced tomato (optional)
  • Zest of one lime
  • 2 limes juiced
  • Salt & pepper

Instructions

  • 1. Season both sides of filets with salt and pepper
  • 2. Meanwhile prepare pineapple salsa by combining juice of 1 lime, lime zest, pineapple, red pepper, cilantro, pinch of salt and pepper and gently fold and allow to rest until fish is ready
  • 3. In a skillet over medium high heat add grape seed oil and when it begins to shimmer add fish skinless side down first
  • 4. Add juice of one lime cooking for about 4-minutes then turning
  • 5. Cook other side for 4-minutes or until done
  • 6. Serve sea bass with pineapple salsa
  • 7. **NOTE: Cooking time varies depending on thickness of fish
