
Prairie Patties – Cheddar and Broccoli

Hi food friends, I am Keira from My Prairie Window blog. I love to cook and I love to collect cookbooks? I made this after I saw it on Facebook, was intrigued and made it myself. The post I saw, and the recipe I followed was from www.pomansmeals.com, go check it out! I adapted it of course and added a few prairie touches to create my version of Prairie Patties These were great as a main course for a lunch, and a great side dish for a dinner. These were even better the next day! I served them with a buffalo dip made of simply hot sauce and sour cream!

Ingredients
- 1 Tbs. minced garlic
- 1/2 onion chopped
- 1 12oz box frozen chopped broccoli/defrosted (I used fresh just steamed it)
- 3/4 cup panko bread crumbs
- 1/2 cup cheddar cheese ( I used sharp)
- 1/3 cup Parmesan cheese
- 2 eggs beaten
- seasoned salt/pepper
- hot sauce to taste
Instructions
- 1. Preheat oven to 400 degrees
- 2. Sautee the onion and garlic in a little oil until limp
- 3. Place all ingredients in a bowl and mix until well combined. If using frozen broccoli be sure to squeeze out all extra moisture
- 4. I used a ice cream scooper, or about 1/4 cup of the mixture to form patties place on a greased ( I used a stone) cookie sheet
- 5. Once they are all formed then bake in the oven for 15 min. Flip and bake for 15 more until edges get a golden brown
