Salmon Tartare with Avocado and Crème Fraiche

I enjoy a cold seafood dish in the summer. This very refreshing salmon tartare with avocado with a dab of Crème Fraiche is one of my favorite appetizers for entertaining friends and family. Salmon tartare is most often served on bread or crackers and makes a great finger food for parties and entertaining. It is always prepared with fresh raw salmon and you must be careful when consuming raw fish. It is imperative that you know the fishmonger in which you are purchasing your salmon from.

I’ve had a wide arrary of salmon dishes and while I prefer my salmon cooked verses having it raw, I truly enjoy sashimi style salmon and Salmon Tartare with Avocado and Crème Fraiche. Without a doubt I have salmon at least twice per week and have created numerous salmon dishes. There are far too many to salmon recipes to say I have one particular favorite.

This Social Chefs Salmon Tartare with Avocado and Crème Fraiche can be served in a variety of ways. This version is for a small group as you will use a considerable amount of salmon. For entertaining large groups I suggest serving on crackers or for four to six guests try serving on toast points.

Ingredients

  • 1lb sushi grade salmon, finely diced
  • 2 tablespoons cilantro
  • 2 tablespoons chopped green onion
  • 1 tablespoons chopped chives
  • 2 teaspoons grated ginger
  • Finely grated zest of one lime
  • Juice 1 lime more if needed (taste)
  • 1 teaspoon rice vinegar
  • ½ teaspoon minced jalapeno
  • ½ teaspoon wasabi powder
  • 1 avocado cut into small pieces
  • Salt and pepper
  • 3 tablespoons extra-virgin olive oil
  • Optional: Crème Fraiche and blade of chive for topping
  • Crème Fraiche: 1 cup heavy cream
  • 2 tablespoons buttermilk

Instructions

  • 1. Place all ingredients in a glass bowl except avocado and stir well.
  • 2. Season salmon with salt and pepper and dice placing in glass bowl with mixture.
  • 3. Cover and refrigerate for 30-minutes and serve.
  • 4. Add avocado to mixture prior to serving or layer in serving glass. For larger groups serve on crackers or toast points.
