I have to be very honest, I really do not follow a recipe for The Social Chef Thai Chicken Lettuce Wraps, I sort of wing it. But here are the ingredients for my Thai Chicken Lettuce Wraps below based on memory.

You can also add chopped peanuts for some added texture if desired. The chicken is best when marinated for 12-hours or more. Let me know what you think, please!

Ingredients

  • 2 boneless chicken breast cut into 1-inch cubes
  • 1 English cucumber peeled and chopped
  • 1 16oz Thai noodles
  • 2 green onions cut into 1-inch pieces
  • 2 medium carrots peeled and shredded
  • 1/2 cup plus 1 tablespoonThai chili sauce (jar)
  • 2 tablespoon rice wine vinegar
  • Pinch of sugar
  • 1 head Bib lettuce leaves rinshed and dried
  • Thai Chicken Marinade
  • 1/4 cup soy sauce
  • 2 cloves minced garlic
  • 2 tablespoons fresh lime juice plus 1 teaspoon zest
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons coconut water or water
  • 3/4 teaspoon red pepper flakes
  • 4-6 wooden skewers

Instructions

  • 1. Soak skewers in water for 30-minutes
  • 2. To make marinade combine all ingredients and stir
  • 3. Place chicken on skewers plaing in a cake tin
  • 4. Pour marinade over chicken, wrap and refrigerate for 2-hours or over night
  • 5. For cucmbers simply season with salt and pepper adding rice wine vinegar and fold
  • 6. Heat a grill on high for 8-10 minutes
  • 7. Add chicken skewers closing grill and cook for 8-minutes or until done.
  • 8. Meanwhile cook Thai noodles based on package direction, drain adding 1 tablespoon Thai chili sauce and fold
  • 9. Serve with Thai chili sauce, garnish Thai noodles with green onion and pinch of red pepper flakes (optional)
  • 10. Serve with Bib lettuce to wrap
