I found a recipe on the internet that simply the image made my mouth water. Reading the recipe I liked it but felt I could make it with a flavor more suited for my taste, which was honey and lime. I seldom ever use a crockpot but this crockpot spicy honey chicken needed time to absorb all the flavors. I only served this alone but I am certain would go great served with mashed potatoes or a rice pilaf.

Ingredients

  • 1 whole chicken about 6-8 lbs
  • 1/2 cup club soda
  • 2 limes juiced
  • 1 cup light brown sugar
  • 1/4 cup low sodium soy sauce
  • 4 cloves minced garlic
  • 1/4 cup honey
  • 1/2 cup apple cider vinagar
  • 1/2 teaspoon Thai pepper flakes
  • 2 tablespoons cornstarch

Instructions

  • 1. Rinse chicken well and remove any organs stuffed inside
  • 2. Place chicken in a large pan deep enough to submerge in cold water adding 1 tablespoon of salt and soak for 30-min
  • 3. Meanwhile turn crockpot to high
  • 4. In a glass bowl combine sugar, honey, soda, soy sauce, garlic, lime juice, vinegar and pepper flakes and stir until sugar is dissolved
  • 5. Remove chicken from water and rinse well
  • 6. place chicken in crockpot breast side up
  • 7. Using a sharp knife cut 4 slices about 4-6 inches long on breast about 1 inch deep Pour mixture over the chicken, cover and cook on high for 2-hrs basting after 1 hour
  • 8. Turn chicken breast side down for 3-hours (may need longer if bird is larger than 6lbs Baste every hour
  • 9. Using a pasta strainer transfer chicken to strainer that sits over a large pot to catch liquids
  • 10. Pour liquids over chicken and let strain for 20-min until chicken is cook enough to handle
  • 11. Place liquids into a fat separator and then pour liquids into a pot
  • 12. Add cornstarch to to equal parts water and stir
  • 13. turn pot to high adding cornstarch and stir until it becomes slightly thick turning off stove and hold
  • 14. Pull chicken pieces off and put into sauce, fold and serve
  • 15. Add more pepper flakes if needed
