Perhaps you’re new to The Social Chef Blog or you’ve never read the about page to better know who I am and how I got involved in culinary. If you haven’t I hope you take the time because I would love for you to know my story and that my passion for cooking runs much deeper than a recipe with a photo attached or posts on Facebook. Many of my blog subscribers write me in private about my faith base and how I grew in my faith through culinary.
Well, if you read my about page then you know Chef Frank Sirullo from The Villa Virella in the Pocono Mountains of Pennsylvania got me hooked on cooking. To this day Frank and his family remain dear friends of mine. This pasta pepper sauce Frank taught me when I was in my 20’s but I haven’t made it in over 15-plus years. I was asked from someone who found my website that had been to the Villa Virella and was seaching for their pepper sauce recipe. I promised I would recreate it and post it for them and for others to enjoy. I am sure if Frank ever sees my blog he will correct my methodology for preparing this pasta pepper sauce. It’s been a long long time.
I am sad to say that many years ago The Villa Virella closed their doors. Frank and his family simply devoted their life to this restaurant serving the finest northern Italian Cuisine. With their children involved in school activities they felt inclined to devote their time to watching them grow and who can blame them for that. This one-of-a-kind restaurant served 8-courses and pasta was the 5th course. Everyone at the table had to agree on the type of pasta so it was delivered together, which was always homemade and usually offered 3-4 choices, but everyone could choose the sauce they yearn for. The pasta pepper sauce was one of many you could choose from. My favorite was Frank’s pasta pepper sauce but I cannot lie, I often had 2-3 servings of pasta just so I could experience his fabulous sauces. They were European size portions in case you were wondering!!
I really miss the Villa Virella but not nearly as much as I miss Frank, Cathy and Uncle John. They made the Villa Virella more than a restaurant, they made it a culinary experience. Thank you Sirullo Family for your inspiration and all those great recipes you shared with me. Here is my version of the Villa Virella’s pasta pepper sauce.

Ingredients
- 1 cup of The Social Chefs Homeade Marinara Sauce (See link above for sauce)
- 1 medium red bell pepper and green pepper julienne
- 1/4 cup heavy cream
- 2 tablespoons extra-virgin olive oil
- 3 anchovies filets in olive oil
- 2 garlic cloves mashed
- 1/4 teaspoon red pepper flakes
- Salt and pepper
- Garnish with freshly grated pecorino romano (optional)
Instructions
- 1. In a small saucepan over medium high heat add olive oil, garlic and sauté for 2-4 minutes until garlic starts to turn brown
- 2. Remove garlic reserving oil adding peppers, pinch of salt, sauteing for 4-minutes
- 3. Reduce heat to medium adding anchovies and mash with the back of a spoon until a paste and stir
- 4. Add marinara sauce folding into peppers sautéing for 2-minutes
- 5. Add heavy cream, red pepper flakes and sauté for another two minutes
- 6. Serve over your favorite pasta al’ dente
- 7. NOTE: Reserve pasta water to add to dish if sauce should become to thick.
