Poached Eggs on Veggie Sausage with Spinach and Tomato Cilantro Salsa

Eating healthy is as difficult as you make it. Being creative and breaking some rules you can create healthy and delicious dishes. I love my breakfast and I love my eggs but get bored eating an egg on a piece of toast every day. Last year during Lent I discovered a veggie sausage that was very good. If you know me personally I am the definition of a Food Lover and never in my life will I become a vegetarian because I love beaf, chicken and pork. Sausage is a favorite of mine but I really enjoy this veggie sausage from Lightlife for breakfast and highly suggest it. Not just because it is healthy but it is very delicious.

Making some small changes in your diet even if only time to time can make a difference in your health. My very favorite breakfast food is eggs Benedict. Nothing else even comes close. However, it is not something you can eat often because it’s loaded with fat. So here is an alternative. I hope you like it.

Poached Eggs on Veggie Sausage with Spinach and Tomato Cilantro Salsa

Poached Eggs on Veggie Sausage with Spinach and Tomato Cilantro Salsa

2 eggs
2 handfuls fresh spinach
Veggie Sausage
Sandwich Thins
2 teaspoons olive oil
1 teaspoon vinegar

Tomato Cilantro Salsa

1 small tomato chopped
2 tablespoons cilantro
1/2 green onion chopped
1/3  jalepeno minced
1 teaspoon fresh lime juice
1 tablespoon olive oil
salt & pepper

Make Tomato Cilantro Salsa first. Combine all ingredients, stir and cover until ready. Refigerate if not using longer than 20-minutes.

In a nonstick pan over medium heat add 1 tablespoon olive oil placing two formed veggie patties and cook about 3-minutes on each side. Transfer to a plate and cover to keep warm. Using same pan over medium heat add another tablespoon olive oil and spinach and stir to coat. Cover with lid and shut off burner. You don’t want the spinach to overcook.

Toast Sandwich Thins and place on plate.

Bring a small pot of water to a boil and add vinegar. Add two eggs and poach. Place sausage on Sandwich Thin, add sauteed spinach, poached egg and top with Tomato Cilantro Salsa.
