As many of you know I am not a vegetarian. I truly enjoy all kinds of food, especially meat. But I have many friends who are either not big meat eaters or are do not eat it at all. So I wanted to do something for my vegetarian friends. I am going to leave you to decide your breakfast but day 1 for me I will be doing a smoothie with black berries and or strawberries. For lunch a simple arugula salad with extra-virgin olive oil and balsamic vinegar. I may add some fresh mozzarella or buratta cheese and a slice of tomato. You be as creative as you want. And if you never had buratta cheese and can get it, you will be thanking me later. For dinner I am making a Mexican Salad. Now many of you may not have the time to go out and get the same ingredients needed to make this today but I posted yesterday on my blog foods that give you a variety of vegetarian dishes that you can make. I will list the ingredients and post the recipe later but wanted you to have what is needed in case you want to make it today. I will post that soon. I will also be making an avocado salad tomorrow so perhaps you want to get those ingredients as well so you’re not making a million trips to the store. The ingredients for my Mexican Salad will consist of:
Fresh cilantro
Cherry tomatoes
Kalamata olives
Green olives
Feta cheese
Cumin powder
Coriander powder
extra-virgin olive oil
chili powder and cayenne pepper or if you have it, hot mexican style chili powder.

Fresh Cilantro (also used above)

Sweet Onion
Vine ripe tomato
